Create the perfect dinner using ingredients from your meal prep! With just a little bit of this and that, you can have dinner ready in less than 10 minutes. Planning ahead is the key to a hassle-free meal. 🍽️

Ingredients:

120g chicken mince
1 tsp olive oil
A mix of herbs (recipe in my new EBOOK)
1 medium-sized gluten-free tortilla
Chopped avocado
Half a cup of salsa (beans, corn, and tomato mix)
Fresh coriander leaves for garnish
Homemade pickled onions
Instructions:

In a bowl, combine the herbs, salt, and chicken until it's well mixed. Place the minced chicken on the tortilla and press it down.
In a large skillet, heat the olive oil over medium-high heat. Add the tortilla with the chicken and cook until it's browned and cooked through, which should take about 5-7 minutes.
Flip the tortilla to the other side, add the beans, and fold it like a quesadilla. Cook for an additional 5 minutes or until it's crispy.
Add your favorite toppings and enjoy!

🌱 How it all began 🌱

Thirteen years ago, right in the midst of my master's studies 😬🧐 and while pursuing my second degree (way back in the day, 😂), life threw me a curveball with a not-so-friendly tumor diagnosis. I was living in Buenos Aires, ❤️surrounded by friends, but I had to undergo an emergency surgery far from my family because flying wasn't an option in that condition. It was a terrifying experience, one that profoundly changed me.

It made me acutely aware of the importance of our food choices and healthy habits. While I'd always been health-conscious to some extent, this was a wake-up call.

Fast forward a couple of years, my own mother Esperanza received a cancer diagnosis, another seismic shock to our family. That's when my Instagram journey began, and my mission grew bigger.😎

If you know me personally, you're well aware of my passion for healthy living and conscientious choices. I've developed services and products aimed at supporting people with busy lives:

🥇 For some, it's me coming to their homes to prepare meals for the week.
🤙 For others, it's workshops or purchasing my EBOOK These are all pieces of my vision for beginners on the path to healthier living.

The sun is shining brightly, and the day of the grand finale has finally arrived! 😎☀️ Over the past week, I've received several bookings for tomorrow's snacks, and I'm excited to share some ideas with you.👏👏👏👏👨‍🍳

One thing I absolutely love is putting together platters. They're a fantastic way to enjoy a little bit of everything, and the flavors are always incredibly fresh and YUMM.

For my platters, I typically include three types of cheese: a soft and spreadable @fromagerdaffinois_au , a rich vintage cheddar, and a Merlot Bellavitano. I portion them out at 25 grams for the creamy ones per person and 30 grams for the hard cheeses. Then, I complement them with seasonal fruits, homemade hummus (prepared with love in my kitchen😁😎), an array of delicious veggies, nuts, pistachios, sultanas and chocolates. The small touches really make the table look absolutely gorgeous. 🧀🍇🥕🤗

And let's not forget POP CORN , a timeless snack favorite! Sometimes, I whip up a sweet batch drizzled with dark chocolate, while other times, I create savory versions with delightful spices, perfect for enjoying with a cold beer. 🍿🍺
