Moroccan Spiced Chicken

minutesThis is one of the chicken marinades we keep in our house. We prepare different Ziploc bags for various chicken versions, ready for hectic days. I absolutely adore Moroccan spices; their aromas are divine. I also made a slight alteration by adding an amazing ingredient – Goji Berries. Although the traditional recipe uses apricots, I strive to eat as healthily as possible.
Ingredients
4 boneless, skinless chicken thighs
4 tsp Moroccan spice
Salt and pepper, to taste
3 onions, finely sliced
1 cup chicken broth
1 spoonful of tomato paste
Fresh parsley, chopped (for garnish)
5 slices of lemon
1 tsp Goji berries
12 olives
Directions
- Preheat the oven to 180Β°C.
- In a bowl, create a flavorful marinade by mixing the olive oil, Moroccan spice, and onions. Pour the marinade over the chicken, ensuring each piece is evenly coated. Cover the bowl and refrigerate for at least 1 hour, or preferably overnight.
- In an oven-proof pan, sear the chicken until it achieves a lovely golden color on each side. Add the diluted tomato paste to the chicken broth, then incorporate olives, Goji berries, and lemon slices atop the chicken. Cover the pan with foil.
- Bake for 35 minutes, and you’ll have a deliciously seasoned chicken that pairs well with couscous or chips. Don’t forget to garnish with chopped parsley.
