For Colombians, rice is one of the things we have to have at least one time per day. We love it, and we have many delicious recipes, both sweet and savoury, with it. To be honest, this recipe comes from a very traditional rice omelette back in Colombia. I gave it a little twist to make it more interesting and lunchboxes friendly.

Ingredients

  • 1 and a half cups of cooked unseasoned white rice

  • 1 cup almond flour

  • 3 tsp of honey

  • 1 and 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup of SoyΒ  milk ( or any milk of your choice)

  • 1/4 cup Avocado oil

  • 2 large egg

  • 1 tsp pure vanilla extract

  • To Add texture and flavors you can add blueberries and some edible flowers if you have or with some nuts or chocolate, it is also delicious.

Directions

  • Preheat your oven (190Β°C). Grease or line a muffin tin with paper liners.
  • In a large mixing bowl, combine the cooked white rice with the almond flour, honey, baking powder, baking soda, and salt. Mix well until the dry ingredients are evenly distributed.
  • In a separate bowl, whisk togetherΒ  Soy the milk, avocado oil or melted butter, egg, and pure vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and gently stir with a spatula until just combined. Be careful not to over-mix.
  • If you want you can add some of the toppings for extra flavour
  • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake the muffins in the preheated oven for approximately 15-18 minutes or until a toothpick inserted into the centre of a muffin comes out clean.
  • Remove the muffins from the oven and allow them to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

    If you have a fresh jam paired with it is so delicious, or if you want something savoury you can add some prosciutto with rosemary and Manchego. You see a very versatile recipe and of course super healthy.
