Seasonal Delights: Strawberry and Mini Burrata Appetizer

With strawberries in season and fantastic deals available, it’s the ideal time to indulge in this exquisite appetizer. I’ve paired the sweetness of ripe strawberries with the lusciousness of mini Burrata from That’s Amore Cheese, undoubtedly the finest Burrata you can find in Australia. Each bite delivers delicious blend of creaminess and freshness, making it an exceptional choice for your special occasion.
This delightful appetizer is designed for one, but it’s also perfect for sharing with your guests. For an extra layer of texture and flavor, consider serving it with some crunchy artisan bread.
Ingredients
Strawberry Organic 250g Punnet washed and disinfected (ready to eat)
1 mini Burrata thatsamorecheese
Fresh basil leaves and mint
2 tsp extra virgin olive oil
1 tsp balsamic vinegar
1 tsp honey
Salt
Optional: chopped pistachios
Directions
- In a pan over medium-high heat, combine the fresh sliced strawberries, balsamic vinegar, honey, and a pinch of salt. Bring the mixture to a boil and cook for 5 minutes. Reduce the heat to medium-low and continue cooking for about 10 minutes, stirring often, until the mixture thickens and resembles jam (reduce the heat to low if necessary). Turn off the heat and allow it to cool for a bit.
- To assemble the salad, create a layer using some of the strawberries and place the Burrata onto a large plate. Spoon the balsamic-marinated strawberries over the Burrata. Drizzle a little extra olive oil over the salad. Season with a pinch of flaky sea salt, fresh basil, mint, and the pistachios. You can also add more fresh strawberries around the plate for extra freshnes.
