Cheese With Cassava Waffles With Quince Surprise

minutesThat recipe is inspired by one of my favourite treats from my country. Pandebonos are one of my favourite treats from Colombian bakeries. They are soft, gluten-free, and packed with delicious cheese, perfectly balanced with sweetness from quince. Believe it or not, we have thousands of similarities, just like the guava.
Ingredients
2 cups of tapioca flour
1 cup crumbled feta
2 eggs
1/4 cup milk
2 tablespoons melted butter
1/4 teaspoon salt
1/4 teaspoon baking powder
2 tablespoons of Precooked corn flour
40 g of Finest quince fruit paste (chopped)
2 tablespoons Cottage cheese
Directions
- Preheat your waffle iron according to its instructions.
- In a mixing bowl, combine the tapioca flour, cheeses, eggs, milk, melted, pre cooked corn flour, butter, salt, and baking powder. Stir until all the ingredients are well combined.
- Once the waffle iron is preheated, lightly grease it with cooking spray or brush it with melted butter to prevent sticking.
- Spoon the cassava mixture onto the waffle iron, spreading it evenly to cover the surface and add little pieces of quince paste in the middle.. Close the waffle iron and cook for about 4-6 minutes, or until the waffles are golden brown and crispy.
- Carefully remove the cooked waffles from the iron and place them on a serving plate.
- Serve the cheese cassava waffles warm with your choice of toppings, if you need, but as a Colombian, having it with a hot coffee is so delicious.
