When I arrived in Australia almost 11 years ago, I was in saving mode because I was a student, so I made millions of meals and snacks with oats because they are very cheap and super healthy. I also made pancakes, and although I know the recipe is everywhere now, I decided to share my version too.

Ingredients

  • 1 cup rolled oats

  • 1 ripe banana

  • 2 eggs

  • Half of the grated apple

  • 1/2 cup of Almond  milk

  • 1 tsp baking powder

  • 1/2 tsp n vanilla extract

  • Tsp of Greek yoghourt

  • Pinch of salt

  • Maple syrup  for topping

Directions

  • In a food processor, pulse the rolled oats until they form a fine floury consistency.
  • Add the  banana, ripe banana, eggs,  almond milk, greek yoghurt,  baking powder, vanilla extract, and salt to the blender or food processor. Blend everything together until you have a smooth batter.
  • Let the batter sit for 5 minutes to allow the oats to absorb the liquid and thicken slightly.
  • Preheat a non-stick skillet or griddle over medium heat. grease the surface with coconut oil.
  • Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles start to form on the surface.
  • Flip the pancakes and cook for an additional 1-2 minutes on the other side, until golden brown.
  • Repeat with the remaining batter, adjusting the heat if needed to prevent burning.
  • Serve the oat pancakes warm with your maple syrup and nuts, if you have fresh fruit you can add a little bit on top for a little freshness.
