Chia Berry Jam

minutesBerries are one of my favourite varieties of fruit, and I am a person who loves a delicious toast in the morning with jam or homemade cereal or muesli. When I was a kid and we were on holidays with grandma, we were lucky to have diverse types of homemade jams. Since then, jam has been for me what Nutella is for Italians.
Ingredients
2 cups frozen mix berries
2 and half tsp chia seeds
2 tsp of monk fruit
Half cup of water
1 tablespoon orange juice
1/2 teaspoon vanilla extract
Zest of an orange
Directions
- In a saucepan, add the berries, water, orange juice, and zest. Heat the mixture over medium-low heat until the fruit is slightly soft.
- After a few minutes, mash the berries to your desired consistency.
- Stir in the chia seeds, monk fruit, and vanilla extract.
- Cook the mixture over low heat, stirring occasionally, for about 15 minutes. The chia seeds will absorb the liquid, and the mixture will thicken to a jam-like consistency.
- Remove the saucepan from the heat and let the chia jam cool for a few minutes.
- Transfer the jam to a clean jar or container and allow it to cool completely. As it cools, the jam will thicken further.
