Oats Pancakes

minutesWhen I arrived in Australia almost 11 years ago, I was in saving mode because I was a student, so I made millions of meals and snacks with oats because they are very cheap and super healthy. I also made pancakes, and although I know the recipe is everywhere now, I decided to share my version too.
Ingredients
1 cup rolled oats
1 ripe banana
2 eggs
Half of the grated apple
1/2 cup of AlmondΒ milk
1 tsp baking powder
1/2 tsp n vanilla extract
Tsp of Greek yoghourt
Pinch of salt
Maple syrupΒ for topping
Directions
- In a food processor, pulse the rolled oats until they form a fine floury consistency.
- Add theΒ banana, ripe banana, eggs,Β almond milk, greek yoghurt,Β baking powder, vanilla extract, and salt to the blender or food processor. Blend everything together until you have a smooth batter.
- Let the batter sit for 5 minutes to allow the oats to absorb the liquid and thicken slightly.
- Preheat a non-stick skillet or griddle over medium heat. grease the surface with coconut oil.
- Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles start to form on the surface.
- Flip the pancakes and cook for an additional 1-2 minutes on the other side, until golden brown.
- Repeat with the remaining batter, adjusting the heat if needed to prevent burning.
- Serve the oat pancakes warm with your maple syrup and nuts, if you have fresh fruit you can add a little bit on top for a little freshness.
