One of my most cherished creations is the Nourish-Moms menu. As an immigrant living far away from my family, I understand the challenges mothers face during the postpartum season when it’s tough for families to come and offer support. This inspired me to develop a delectable menu specifically designed for the first week after giving birth. The selection of ingredients was thoughtfully curated in collaboration with doctors, a professional breastfeeding expert, and myself, ensuring that these meals not only taste delicious but also provide nourishment and support during this important time

Ingredients

  • 1 cup creamy peanut butter

  • 1 cup of Maple syrup

  • Half cup of almond Flour

  • 1 large egg

  • 1 tsp pure vanilla extract

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/4 cup chopped peanuts

Directions

  • Preheat your o 170°C  Line a baking sheet with baking paper.
  • In a mixing bowl, combine the creamy peanut butter, maple syrup, egg, and pure vanilla extract. Mix until the ingredients are well incorporated and form a smooth dough.
  • Add the baking soda, Almond flour, and salt to the dough. Mix until they are evenly distributed.
  • Rest the dough in the fridge for 10 minutes or until it is compact to have better consistency before you roll them balls.
  • Make little  balls with the dough and place them on the baking sheet, leaving enough space between them to allow for spreading while baking.
  • Add a few peanuts on top of each cookie by pressing them gently.
  • Bake the cookies in the preheated oven for approximately 10-12 minutes or until the edges turn golden brown..
  • Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
